No-Bake Carrot Cake Energy Bites
Bites Yield: 12 balls

Ingredients:
3 Medjool dates
4 dried apricots
2 Tbsp unsweetened applesauce
2 Tbsp maple syrup
1 tsp vanilla extract
1 cup rolled oats
¼ cup coconut flour
¼ tsp ground cinnamon
1/8 tsp ground cardamon
1/8 tsp ground ginger
1/8 tsp ground nutmeg
1 cup shredded carrots
Unsweetened shredded coconut, for garnish
Directions: In a food processor, pulse dried fruit. Add remaining ingredients and pulse, mix well, scraping down sides as needed. Roll into balls and roll into coconut flakes. Store in the fridge or freezer.
